Tasting Note
Perfumed red and dark cherry, raspberry and pomegranate with sous-bois, forest floor, white pepper and baking spice. Silky texture, bright acidity and a persistent, mineral-tinged finish.

De-stemmed fruit, 5–7 day cold soak, slow native fermentations with pump-overs then punch-downs; aged ~15 months in French oak (≈33% new); bottled unfined and unfiltered.
