Western: roast duck, mushroom risotto, roast lamb, pork tenderloin, grilled salmon. Asian: Peking duck, char siu, miso‑glazed fish, teriyaki salmon, shiitake stir‑fry, Korean BBQ (bulgogi/galbi).

Production Method

Fruit from own‑rooted Pommard clone vines; ~20% whole-cluster, native/selected yeast fermentation; aged in French oak (mix of neutral and some new), bottled unfined and unfiltered; dry‑farmed.
