Tasting Note

Medium-bodied Pinot Noir of wild cherry, raspberry and blackberry with baking spice, savory herbs, turned earth and mineral lift. Silky texture, powdery tannins, bright acidity and a long saline-tinged finish.

Western: roast duck, lamb, pork belly, mushroom risotto, charcuterie. Asian: Peking duck, char siu, miso-glazed salmon or black cod, beef bulgogi, shiitake gyoza.


Production Method

Biodynamically farmed fruit; 100% destemmed; native yeast fermentation; ~15 months in French oak (≈50% new); bottled unfined and unfiltered.
