Perfumed red berries (strawberry, raspberry, cherry), cranberry, forest floor and baking spices with subtle vanilla and chalky mineral on the finish.

Production Method
100% destemmed, fermented in many small native-yeast lots; gentle pump-overs then punch-downs; aged 14–16 months in French oak (≈33–35% new); bottled unfined and unfiltered.

Nicolas‑Jay (founded by Jay Boberg and Burgundian Jean‑Nicolas Méo, c.2012) sources fruit from top Willamette Valley sites including Hyland, Momtazi, Nysa and Bishop Creek; Burgundian cellar techniques applied in Oregon.
