Tasting Note
Delicate blanc-de-noirs: white peach, citrus blossom, green apple, lemon zest, subtle white pepper and flinty minerality. Silky texture with crisp acidity, light oak influence and a clean pear-tinged finish.
Food Pairing
Western: oysters, scallops, grilled lobster, roast chicken, creamy pasta, goat cheese. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, light Thai or Vietnamese seafood dishes, miso-marinated fish.
Production Method
Gently whole‑cluster pressed Pinot Noir with minimal skin contact; fermented in stainless and French oak (some new), native yeast, aged on lees with light oak maturation; bottled dry, typically unfined.
