Tasting Note

Aromas of violet, rose petal, kirsch and crushed raspberry with cedar, star anise and forest-floor earth. Medium–full palate of red and black fruits, saline minerality, bright acidity and polished, dusty tannins; long, savory finish.


Food Pairing

Western: roast duck, pork tenderloin, mushroom risotto, grilled salmon, charcuterie. Asian: Peking duck, hoisin‑glazed pork, Korean BBQ, teriyaki/miso salmon, shiitake stir‑fry.


Production Method

Hand-harvested fruit, small-lot fermentations; matured ~15 months in French oak (≈50% new).

Bishop Creek Vineyard (estate acquired 2014). Own‑rooted vines planted 1988–1990 (clones Pommard, Wädenswil, 777); organic, no‑till farming on marine sedimentary soils in Yamhill‑Carlton AVA.
