Tasting Note

Broody black-cherry and boysenberry fruit with blueberry, earthy undertones, peppercorn and potpourri spice; hints of leather, roasted meat and mineral. Medium-bodied with firm, grainy tannins and a long, juicy finish.


Food Pairing

Roast duck, mushroom risotto, pork tenderloin, coq au vin, grilled salmon, Korean bulgogi, char siu, miso-glazed eggplant, soy-ginger seared tuna.


Production Method

Small-lot fermentations from own-rooted, late-1980s vines; aged ~15 months in French oak (approx. 50% new), bottled unfined and often unfiltered.

Nicolas-Jay is a partnership of Jay Boberg and Jean-Nicolas Méo; Bishop Creek is their estate, planted in the late 1980s and farmed as old-vine Pinot Noir producing small quantities.
