Tasting Note
Perfumed white flowers, chamomile, pear and white peach with citrus oil, wet-stone minerality and saline lift; hints of ginger, honeycomb and toasted spice. Bright, racy acidity, medium body and a saline, minty finish.

Production Method
100% barrel-fermented with native yeasts; matured ~13 months in French oak (≈25% new). Fruit sourced from Bishop Creek, Spirit Hill and Von Oehsen; vineyards farmed organically.

Founded by Jean‑Nicolas Méo and Jay Boberg; purchased Bishop Creek in 2014. Nicolas‑Jay applies Burgundian viticulture and winemaking in the Willamette Valley with organic practices and site-driven sourcing.
