Tasting Note

Bright lemon, green apple and quince with wet-stone minerality, brioche and toasted almond. Vibrant, saline acidity and a long, focused finish (fresh citrus pith and subtle cream).

Western: grilled or roasted halibut, lemon‑garlic halibut, roasted chicken, mushroom cream pasta, soft cheeses (brie, camembert). Asian: miso‑glazed black cod, tempura prawns, richer sushi (tuna), lightly spiced Thai coconut curries, soba with mushroom sauce.


Production Method

Barrel-fermented with ambient/indigenous yeast in French oak; aged approximately 15 months (critic notes indicate use of neutral French oak for this vintage).

Nicolas-Jay is a partnership between Burgundian winemaker Jean‑Nicolas Méo and Jay Boberg, producing Chardonnay from estate and premium northern Willamette sites including Bishop Creek and Spirit Hill. Estate located in the Dundee/Newberg area.
