Tasting Note
Bright, straw-colored Chardonnay with lemon verbena, white flowers, orange zest, Galia melon, tangerine and crisp peach. Linear minerality and fine-textured, long finish with subtle toasted-nut undertones.

Western: roasted crab or lobster with butter, herb-roasted chicken, mushroom risotto, creamy pasta; Asian: miso-glazed black cod, tempura prawns, soy-sesame seared salmon, mild Thai coconut or lemongrass chicken curry.
Production Method
Hand-harvested Willamette fruit; fermented and aged in French oak (primarily neutral) with lees contact and light malolactic influence; bottled unfined/unfiltered in small production.

Nicolas-Jay is a Willamette Valley project by Burgundian Jean-Nicolas Méo and Jay Boberg. They own and farm Bishop Creek (acquired 2014) and source top Willamette sites using organic/no‑till practices.
