Tasting Note

Clean, medium-dry profile with steamed-rice, green apple, chrysanthemum and light melon notes, subtle umami, soft effervescence in some batches, crisp white-pepper acidity and a clean, slightly saline finish.


Food Pairing

Sushi/sashimi, tempura, grilled fish, yakitori; western: oysters, ceviche, light salads, goat cheese, roasted chicken; asian: shabu-shabu, nabe, steamed vegetables with soy/ponzu, teriyaki dishes.


Production Method

Brewed as a Junmai (often Kimoto) using 100% Yamadanishiki rice; some releases are namachozo (lightly pasteurized) and emphasize natural fermentation and low ABV.
