Tasting Note

Medium-dry and umami-driven. Aromas of green apple, pear and peach with floral notes (osmanthus, chrysanthemum) and rice flour; slight effervescence, soft acidity, pithy citrus bitterness and a clean, drying finish.

Sushi/sashimi, tempura, grilled white fish, lightly seasoned seafood (western: ceviche, goat cheese, roasted chicken; asian: kaiseki, kappō, yakitori, miso-glazed fish, light noodle dishes).
