Tasting Note
Bright red cherry, raspberry and wild strawberry with forest-floor, black tea and spice. Smoky oak and herbal lift. Silky, layered palate with plush fruit, bright acidity and fine woody tannins; long, stony finish.

Roast duck, wild mushroom risotto, grilled salmon with lentils, roast pork, beef bourguignon; Asian: char siu or hoisin duck pancakes, miso-glazed fish, teriyaki salmon, Korean BBQ, umami mushroom soba.
Production Method
Hand-harvested, chilled, destemmed and fermented with indigenous yeasts in open-top fermenters (pigeage). Matured 10 months in French oak (20% new), 100% natural malolactic; bottled unfined/unfiltered. Organic, minimal-intervention practices.
