Tasting Note
Bright lemon and white-peach fruit with stone-fruit and nectarine notes, saline/rockpool minerality, subtle cashew/toasty oak and fine lees texture. Medium-plus weight, fresh acidity and a long, elegant finish.

Seared scallops, roast chicken with herbs, lobster or creamy pasta, mushroom risotto; miso-glazed black cod, tempura prawns, Cantonese steamed fish, sushi (fatty tuna).
Production Method
High-solids, partial wild-yeast fermentation with minimal settling; partial barrel fermentation (≈10% new French oak), 10 months on full lees, malolactic fermentation and coarse filtration; vegan-friendly.
