Tasting Note
Ripe nectarine and baked apple with citrus-zest, gunflint and oyster-shell minerality. Creamy cashew and pastry notes from oak and lees; savory, focused acidity and a long, chalky finish.

Roast chicken, mushroom risotto, pork belly, grilled salmon, creamy pasta; Asian: miso-glazed black cod, sashimi/sushi, prawn tempura, light Thai coconut curry.
Production Method
Whole-bunch press, 24–48h settling; wild-yeast fermentation in barrels (c.15% new French oak); 10–12 months on lees with malolactic fermentation; coarse filtration. Organic, dry-farmed.
