Tasting Note

Perfumed red cherry, wild strawberry and plum with violet florals, warm spice and subtle manuka-smoke. Silky texture, bright acidity, fine cocoa-like tannins and a long, velvet finish.

Roast duck, pork belly, lamb, mushroom risotto, aged cheddar; Asian: char siu pork, miso-glazed salmon, Korean BBQ short ribs, shiitake soba, teriyaki dishes.


Production Method

Hand-harvested fruit; wild-yeast open-top fermentation; natural malolactic; aged ~10–12 months in French (c.20% new) oak; unfined, unfiltered; organically dry‑farmed.
