Tasting Note

Pale ruby with aromas of cranberry, pomegranate, wild cherry, dried herbs and forest-floor. Medium-bodied, elegant red-fruit core with savory, smoky and mineral notes, fine-grained tannins and a long, lingering finish.


Food Pairing

Western: roast duck, mushroom risotto, pork loin, lamb shoulder, beef bourguignon. Asian: Peking/hoisin duck, char siu pork, miso-glazed salmon or aubergine, yakitori, mushroom hot-pot.


Production Method

Hand-harvested fruit; open-top fermentations with indigenous yeasts; matured in French oak (around 15% new) for ~10–12 months; minimal fining/filtration. Estate organic practices.
