Tasting Note

Bright dark-red cherry and raspberry with plum, violet and cedar; savory earth, light spice and sous-bois. Medium-plus acidity, fine-grained medium tannins, plush mid-palate and a long, spicy mineral finish.


Food Pairing

Western: roast lamb, duck, mushroom risotto, grilled salmon. Asian: Peking duck, char siu or hoisin pork, miso-glazed fish, shiitake/soy-braised vegetables.


Production Method

Hand-harvested fruit; partial whole-bunch inclusion; indigenous yeast fermentation; matured ~11–12 months in French oak (≈25–30% new); minimal intervention and fining.
