Tasting Note

Red cherry, kirsch and mulberry with lavender, cinnamon and forest-floor notes. Earthy, savory mid-palate with firm, grainy tannins, lively acidity and a long, mineral finish.

Roast duck, mushroom risotto, braised beef, lamb, pork belly, coq au vin; Asian: Peking duck, char siu, miso-glazed salmon or aubergine, soy/ginger braised pork (bun), mushroom ramen or dishes with shiitake and fermented flavors.


Production Method

Hand-harvested, indigenous yeast fermentation in open-top vats; matured ~12 months in French oak (casks), with approximately 15–20% new oak; minimal intervention and limited fining/filtration.
