Tasting Note

Ripe white and yellow stone fruits (peach, apricot), baked apple, hazelnut and brioche with subtle vanilla oak and struck‑flint minerality; creamy texture, bright citrus acidity and a long, savoury finish.


Food Pairing

Western: roast lemon‑herb chicken, grilled or buttered salmon, lobster, creamy mushroom risotto, pasta with prawns. Asian: miso‑glazed cod, tempura prawns, sushi (fatty cuts), lightly spiced Thai‑style coconut fish curry.


Production Method

Hand‑harvested, whole‑cluster/whole‑bunch press; wild‑yeast fermentation in French oak (c.10–15% new), extended lees ageing and natural malolactic fermentation; minimal fining/filtration.
