Ripe yellow peach, lemon-curd and honey with wet-stone/mineral and gentle toasty oak. Saline, biscuity texture and bright acidity leading to a long, savory finish.

Western: roast chicken, lobster/seafood with beurre blanc, creamy pasta, pork belly, soft-ripened cheeses. Asian: miso‑glazed cod, tempura prawns, richer sushi (e.g. toro), Cantonese roast duck, mild coconut-based dishes.
