Tasting Note
Refined citrus, pear and stone-fruit with toasted hazelnut, oyster-shell minerality and subtle spice. Silky texture, balanced acidity and a saline, lingering finish.

Western: roast chicken, butter-poached lobster, creamy pasta with mushrooms, aged Gruyère. Asian: miso-glazed black cod, tempura prawns, seared salmon sushi, rich Thai coconut curry with prawns.
Production Method
Hand-harvested fruit, whole-bunch press, native (wild) yeast fermentation; barrel fermentation with a small percentage new French oak, full malolactic conversion and 10–12 months on lees. Minimal fining/filtration.
