Tasting Note

Apricot, lemon-curd and white stone-fruit with hazelnut, oat-biscuit and a flinty struck-match note. Creamy, textured palate, lively acidity and a long, mineral-tinged finish.

Western: roast chicken, butter-poached lobster, creamy pasta, aged Comté; Asian: miso-glazed black cod, seared scallops with soy-butter, pork belly with hoisin, tempura prawns.


Production Method

100% whole-bunch press; wild-yeast barrel fermentation (25% new French oak); 100% malolactic; 12 months on full lees with monthly bâtonnage; coarse filtration; unfined.
