Ripe nectarine, white‑peach and citrus zest with flinty mineral and toasted hazelnut notes; creamy lees texture, gentle spicy oak, bright acidity and a long, chalky, mineral finish.

Food Pairing

Western: roast chicken with mushroom cream sauce, butter‑poached lobster, creamy pasta, seared scallops. Asian: miso‑glazed black cod, tempura prawns, soy‑glazed pork belly, milder coconut Thai curries, richer sushi (fatty tuna).

Hand‑harvested; whole‑cluster pressing; wild‑yeast fermentation with partial barrel (20–30% new French oak) fermentation; partial malolactic; 10–12 months aging on lees; minimal fining/filtration.
