Tasting Note
Elegant, savoury Pinot Noir: vanilla, violets and pink peppercorn with pomegranate and blueberry, layered with brooding earth and manuka-smoke. Fine cocoa-like, chalky tannins, soft acidity and a long, savoury finish.
Food Pairing
Western: roast duck, venison, grilled lamb, mushroom risotto, beef carpaccio. Asian: slow-cooked hāngī, Chinese roast duck, Korean BBQ, miso-glazed aubergine or salmon, shiitake soba.
Production Method
Hand-harvested fruit; chilled, sorted and destemmed; wild-yeast open-top fermentation with hand plunging; 100% natural malolactic; matured ~10 months in French oak (c.20% new); unfined, unfiltered; certified organic.
Vineyard Info
