Tasting Note

Rich, layered Pinot with ripe red and black cherry, wild strawberry, forest-floor earth, dried herbs, cocoa and gentle oak spice. Silky texture, fine firm tannins and a long mineral-tinged finish.

Western: roast duck, grilled lamb or venison, wild‑mushroom risotto, porcini pasta. Asian: Peking duck, char siu pork, miso‑glazed salmon, shiitake hot pot, teriyaki dishes.


Production Method

Organic, dry‑farmed, hand‑harvested fruit; wild‑yeast open‑top fermentation, natural malolactic; matured ~10 months in French oak (c.20% new); unfined and unfiltered.
