Tasting Note
White peach, pear and citrus with oyster‑shell minerality, toasted grain, hazelnut and subtle leesy/oak spice; silky texture, bright acidity and a long saline, lime-tinged finish.

Organically farmed; 100% whole‑cluster press, wild‑yeast barrel fermentation and élevage in French oak (c.15% new); minimal intervention to preserve site purity.
