Tasting Note

Clean, terroir-driven Junmai Ginjo with pear, white peach and citrus notes, gentle rice umami, soft minerality and balanced acidity. Medium-bodied, slightly off‑dry with a clean, medium-length finish.


Food Pairing

Sushi, sashimi, tempura, grilled white fish, oysters, ceviche, roast chicken, light goat or ricotta cheeses, miso‑glazed fish, yakitori, lightly spiced Asian stir‑fries.


Production Method

Junmai Ginjo: Nechi‑Valley Gohyakumangoku polished (~55%), low‑temperature multi‑stage fermentation, no added brewers’ alcohol; typically bottled after single pasteurization (瓶燗火入れ).

Produced by Watanabe Shuzoten (est. 1868). Family‑run ‘Domaine’ style: estate rice cultivation in Nechi Valley and in‑house sake production under the Nechi/根知男山 labels.
