Tasting Note

Wet-stone minerality with aniseed, steamed rice, bamboo-leaf herbs and ripe banana. Medium-bodied, off-dry palate with delicate sweetness, gentle mid-range acidity and a dry, long marshmallow-like finish.


Food Pairing

Western: grilled vegetables, roast chicken, seared scallops, light salads. Asian: sushi, sashimi, tempura, yakitori, miso-glazed fish, lightly seasoned noodle dishes.


Production Method

Junmai Ginjo (rice polished to ~55%); brewed from locally grown Gohyakumangoku, ginjo yeast fermentation, cold-pressed and bottled relatively young; producer follows a domaine-style rice-to-bottle approach.
