Tasting Note
Intense dark cherry and black-plum fruit with wild herbs, thyme, balsamic and mineral notes; hints of tobacco, cedar and subtle oak. Silky, concentrated palate with fine, firm tannins and a long, savory finish.

Production Method
Hand-harvested; double selection and cold maceration; fermentation in small French oak tinos (35–50 hl) with gentle pigeage and indigenous yeasts; malolactic in oak; bâtonnage and ~18 months élevage in French oak barrels and large foudres.

Estate wine from Mustiguillo (Toni Sarrión), first Vino de Pago in the Comunidad Valenciana. 89 ha contiguous limestone vineyards; old-vine Bobal (1945, 1970) at ~800m; organic viticulture, low yields and traditional gobelet training.
