Earthy, spicy red with ripe black fruit, cedar, leather, barnyard funk and tobacco; bright acidity and firm, powdery tannins with a long, licorice-tinged finish.

Western: roast lamb, venison, beef stew, aged hard cheeses. Asian: Korean BBQ (bulgogi), Chinese red-braised beef, Indian tandoori/lamb, grilled Middle Eastern kebabs.
Production Method
Hand-harvested grapes fermented with indigenous yeasts; aged ~12–18 months in French oak, assembled after a few years in vat and released late after extended bottle ageing.
