Spicy red fruits, cedar, plum, figs and dates with Christmas-cake spices, stewed plums and leather. Silky tannins, vibrant acidity and a long, layered finish with earthy, tobacco and cedar notes.

Food Pairing

Roast/grilled lamb, beef, game, mature cheeses, stews and casseroles; Asian: Korean BBQ, Chinese braised beef, spicy Szechuan lamb, Malaysian/Indonesian beef rendang, Lebanese mezze and spiced lamb kebabs.

Production Method

Each variety fermented separately (concrete vats) with extended maceration, aged in French Nevers oak (~1 year), then blended and bottle-aged. Minimal intervention: no fining, light filtration, low SO2.
