Mature Musar: dried cherry, baked plum, leather, cedar, tobacco and spice with earthy, forest-floor notes. Lively acidity, mineral/salty finish and lingering licorice. Evolved, complex and rustic.

Food Pairing

Western: roast lamb, braised beef, duck, mushroom risotto, aged cheeses (Manchego, pecorino). Asian: lamb tagine, Moroccan/Levantine stews, beef rendang, Korean BBQ, char siu, umami-rich shiitake dishes.

Production Method

Each variety fermented separately, aged in French oak (commercially ~1–3 years), blended after barrel aging, minimal-intervention/natural yeast approach and extended bottle ageing prior to release.
