Tasting Note
Citrine colour with fine persistent mousse. Aromas of green apple, pear, citrus peel, light brioche and toast. Palate is fresh with balanced acidity, stone-fruit and a long, fruit-driven finish.

Seafood (oysters, shrimp, sashimi), shellfish, sushi and tempura; Western: smoked salmon, roast chicken, creamy cheeses, fried chicken; Asian: dim sum, light Thai seafood, sushi rolls, Chinese steamed fish.

Production Method
Pneumatic pressing, 1st fermentation in stainless steel, 2nd fermentation in bottle (méthode traditionnelle) with cellar ageing (typically ~3 years) and occasional bâtonnage.
