Tasting Note

Concentrated red and black cherry, wild berries, violets, sous-bois, sweet spice and dark chocolate with saline minerality; silky texture, fine powdery tannins and a long, persistent finish.

Western: duck confit, beef en croûte, mushroom risotto, roast lamb, aged comté or Ami du Chambertin. Asian: Peking duck, miso‑glazed dishes, shiitake‑rich soba, char siu, Korean bulgogi with mushrooms.


Production Method

Hand-harvested Pinot Noir; destemmed, cold-soaked, gentle punch-downs; matured in oak barrels (≈70–75% new) for around 12–18 months.
