Tasting Note

Intense garnet colour. Aromas of cassis, blackberry, black cherry, violet, cedar, graphite and licorice. Full-bodied, concentrated, with fine satin tannins, bright freshness and a long, perfumed finish.

Western: roast beef, ribeye, lamb, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), braised beef with soy and star anise, mushroom hot pot.


Production Method

Hand-harvested fruit; traditional destemmed fermentation in temperature-controlled vats, malolactic conversion, then aged ~18–20 months in French oak barriques (approx. 50% new oak estimate).
