Tasting Note
Deep purple; aromas of blackcurrant, blackberry, violets, pencil lead and spice. Concentrated black fruit, cedar and cocoa on the palate with fine-grained ripe tannins, bright acidity and a long, mineral-driven finish.

Western: roasted ribeye, herb-crusted rack of lamb, venison stew, aged hard cheeses. Asian: Peking duck, char siu (barbecue pork), Korean beef short ribs (galbi), braised beef with soy and star anise.
Production Method
Hand-harvested, parcel vinification in gravity-fed vats; traditional fermentation and élevage in new French oak barrels for ~18–22 months, racked, fined and bottled after maturation.
