Tasting Note
Concentrated blackcurrant and blackberry with violets, cedar, pencil lead, warm spices and dark chocolate; full-bodied, fine-grained tannins, fresh acidity and a long, mineral-tinged, graphite finish.

Western: roast rib of beef, herb-crusted rack of lamb, venison stew, mature hard cheeses. Asian: Peking duck, char siu, braised beef with soy, miso-grilled tuna, rich Cantonese or Szechuan dishes.
Production Method
Hand-harvested (7–29 Sept 2017), classic Bordeaux vinification with temperature-controlled fermentation, malolactic in barrel and élevage in French oak barrels (some new oak), then blended and bottled after maturation (c.18 months).
