Tasting Note

Dense blackcurrant and blackberry core with violet, graphite, tobacco and cocoa; full-bodied, concentrated, silky yet powerful tannins and a long mineral, cocoa-tinged finish.

Roast lamb, beef tenderloin, aged hard cheeses (Comté, Manchego); Asian: Peking duck, Korean barbecue (bulgogi/galbi), miso-braised short ribs, spicy Sichuan beef.


Production Method

Hand-harvested; varieties and plots vinified separately in wooden vats; 15–25 days maceration; malolactic fermentation; aged up to 22 months in new French oak barrels.
