Tasting Note
Concentrated cassis and black cherry with graphite, tobacco, dark chocolate and cedar. Powerful, mineral-driven core, firm ripe tannins and a long, saline finish—evolves for decades.

Western: roast ribeye, lamb chops, beef bourguignon, aged Manchego or Comté; Asian: Peking duck, char siu (Cantonese BBQ pork), Korean galbi (grilled beef short ribs), Sichuan beef or beef rendang.

Production Method
Hand-harvested; fermentations in temperature-controlled vats with malolactic completed; aged ~18–22 months in 100% new French oak barrels.
