Tasting Note

Dense blackcurrant and blackberry core with cedar, cigar-box, graphite and floral notes. Silky, ripe tannins, restrained oak spice and a long saline, mineral finish. Powerful yet balanced with unfolding secondary complexity.

Roast beef, leg of lamb, venison, beef bourguignon; Peking duck, Cantonese char siu, Korean BBQ (galbi), rich soy-braised short ribs.


Production Method

Hand-harvested, destemmed; fermented in temperature-controlled wood vats; malolactic completed; matured ~18–19 months in new French oak barrels; lightly clarified before bottling.
