Tasting Note

Mature Pauillac: macerated dark fruit and redcurrant with dried cranberry, blond tobacco, cedar, game and mineral notes. Silky, refined tannins, bright acidity and an acidulated, earthy finish with prunes, spice and gentle smokiness.


Food Pairing

Western: roast leg of lamb, côte de boeuf, duck confit, aged hard cheeses. Asian: Peking duck, char siu (barbecued pork), Korean BBQ (bulgogi), beef hot pot, mushroom-based Chinese hot pot.


Production Method

Hand‑harvested with rigorous sorting; fermented in temperature‑controlled vats and matured ca. 18 months in French oak barriques (high percentage new oak; medium‑to‑heavy toast).
