Tasting Note
Dark cassis and black cherry with coffee, tobacco, licorice and sweet oak; firm, chewy tannins, mineral and menthol accents, medium‑long finish. Now showing tertiary notes of mocha and dried herb.

Food Pairing
Western: roast lamb, prime rib, beef short ribs, game (venison), aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ, braised beef with soy and star anise, rich Sichuan beef.

Production Method
Traditional Bordeaux vinification: destemmed grapes, cold soak and extended maceration, fermented in vats, matured 12–18 months in French oak barrels (including new oak). (Typical château practice for the vintage.)
