Tasting Note
Tropical and citrus aromas of guava, passionfruit, grapefruit and lime with floral and fennel notes. Palate is zesty, flinty and creamy from barrel ageing, showing nashi pear, bright acidity and a long, sapid grapefruit‑pith finish.

Western: oysters, grilled prawns, lobster, roast chicken, creamy pasta, pork belly. Asian: sashimi/sushi, Hainanese chicken rice, Thai/ Vietnamese seafood salads, grilled miso salmon, vegetable stir-fries.
Production Method
Each variety harvested and fermented separately; 100% barrel fermented (mostly older barriques), relatively hard pressing and lees stirring for texture; matured ~11 months in oak before blending and bottling.

Single‑vineyard Mount Mary (est. 1971) in the Yarra Valley, family‑owned by the Middleton family. Triolet first produced in 1987; a flagship ageworthy white from a premium Australian producer.
