Tasting Note

Citrus-driven (lemon, lime) with honeydew, pear and lychee, fine phenolic texture and oyster-shell/mineral notes. Medium-bodied, vibrant acidity and a long, clean, saline finish.


Food Pairing

Western: oysters, grilled scallops, roast chicken, creamy pasta, lemon-herb fish. Asian: sushi/sashimi, tempura, Thai fish curry, Vietnamese spring rolls, Chinese steamed fish.


Production Method

Each variety hand‑picked and fermented separately in barrel; matured ~11 months in mostly older French oak (≈5% new), lees stirring and some large-format barrels before blending.
