Tasting Note
Perfumed red fruits—blackcurrant, cherry and plum—with violet, cedar and cinnamon spice. Medium-bodied, fine-grained chalky tannins, bright acidity and a long, mineral finish; elegant and ageworthy.

Roast lamb, beef fillet, aged cheddar, venison; Asian: Peking duck, char siu/roast pork, Korean BBQ (bulgogi), braised beef with soy and star anise.
Production Method
Hand-harvested, destemmed; fermented in open and closed fermenters with frequent pump-overs; malolactic fermentation; matured in French oak (c.30% new barriques and large-format casks), then racked to seasoned barriques.
