Tasting Note
Perfumed and refined: violets, red and black currants, mulberry, cedar, tobacco and pencil lead with subtle spice; silky texture, fine-grained tannins and a long, precise finish.
Food Pairing
Western: roast lamb, ribeye steak, venison, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), miso-glazed aubergine, Sichuan-style beef.
Production Method
Each variety fermented separately on skins (12–16 days), malolactic fermentation, matured 18–22 months in French oak (≈35% new; mix of barriques and large oak), then blended and bottled.
