Tasting Note
Perfumed cassis and dark cherry with violets, cedar, tobacco and chocolate; cool, medium-bodied, fine bony tannins and lively acidity finishing long and pure.
Food Pairing
Western: roast lamb, beef, venison, mushroom risotto, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), Sichuan beef, grilled miso aubergine.
Production Method
Grapes vinified separately; matured 18–22 months in French oak (mix of large-format hogsheads and new barriques, ~30–35% new) before blending and bottling.

Mount Mary, founded by Dr John Middleton in 1971/72 in the Yarra Valley; family-owned, tiny production, Sam Middleton (third generation) is head winemaker. Quintet is their flagship Bordeaux-style blend.
