Tasting Note

Elegant medium-bodied Bordeaux-style blend: blackcurrant, dark cherry and plum with cedar, tobacco, graphite, dried herbs and subtle spice. Fine-grained tannins, bright acidity and a long, savory finish.

Western: roast lamb, grilled ribeye, beef stew, mushroom risotto, aged cheddar. Asian: Peking duck, char siu, Korean BBQ short ribs, soy-braised beef, miso-glazed mushrooms.


Production Method

Hand-harvested, destemmed; fermented in open and closed fermenters with pump-overs; malolactic fermentation; matured ~22 months in French oak (mix of new barriques and large-format casks).
