Tasting Note

Light ruby; red cherry, raspberry and blueberry with forest-floor, mushroom, herbs and gentle spice. Elegant, fine/superfine tannins, medium–full body and long, fresh finish.

Western: roast duck, mushroom risotto, pork tenderloin, roast lamb, grilled salmon. Asian: Peking/hoisin duck, miso-glazed salmon, teriyaki chicken, char siu pork, shiitake stir-fries.


Production Method

Destemmed with whole berries; short open-top ferment (7–14 days), malolactic in barrel; aged c.16–18 months in French oak (≈20–25% new).
